Japanese Hamburger Steak

Japanese-style Hamburger Steak is quite commonly found in Japan. It’s commonly called “Hambaagaa” or “Hambagu”. These hamburger steak are found at many fast-food chain and quick meal restaurants. Hamburger steak is made with either ground beef or pork. Also, there are many recipes out there that uses Red-Wine Jus but I decided to cook with a less thicker sauce as I am serving mine with rice.  So in this simple quick homecook recipe I am using Shimeji mushrooms to infuse the sauce with mushroom flavours.

Japanese Hamburger Steak

Ingredients:

  • 200g ground pork (or beef)
  • 1 spring onion, cut diagonally
  • 1 packet shimeji mushrooms (discard roots)
  • Patty mixture:
    • 1/2 brown onion, minced finely
    • 3 tablespoon breadcrumbs
    • 2 tablespoon sake
    • 1 small egg
    • Salt and pepper
  • Sauce
    • 250ml Dashi stock (soup stock)
    • 2 tablespoon sake
    • 1 tablepoon light soy sauce
    • 1/2 tablespoon mirin/sweet sake
  • 1 tablespoon potato starch mix with 2 tablespoon water
  • Cooking oil

Steps:

  1. In a bowl, combine the ground pork with patty mixture well until sticky.
  2. Using palms of your hands, shape the pork mixture into ball shape then pound it on a flat surface to form a patty.
  3. Heat up oil in a non-stick pan. When hot, place the pork patty into the pan and fry them both sides till browned.
  4. Add the sauce ingredients into the non-stick pan and let it boil.
  5. Next add the shimeji mushrooms and the white parts of the spring onions into the pan. Turn down the heat and cover with lid. Let it simmer for 5 minutes before thickening the sauce with starch water.
  6. Serve it onto a plate and garnish with the green parts of the spring onion and dash of pepper.
