Simple Irish Soda Bread

Sorry it has taken me so long to find time to blog about this Irish Soda Bread recipe. I apologize for that big gap since the mention of the Soda Bread in my last post of Irish Stew. I love the easiness and how quick you can whip up a bread just by 15 minutes prep time! No proofing required. Nothing beats having rustic looking and crusty bread with soft middle to go with a hearty stew.

This recipe is a simple Irish Soda bread, but you can of course add extra herbs, nuts to it if you like. I got the recipe from Mastering the Art of Baking by Anneka Manning. I would have baked it slightly longer (books says between 45-50mins) as I was too anxious to see the end result at the 45th minute. It was still slightly dense in the thickest part (middle) of the bread, otherwise the bread is fantastic.

Simple Irish Soda Bread



  • 200g plain/all purpose flour
  • 200g wholemeal flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking/bicarbonate soda
  • 2 teaspoon salt
  • 60g chilled unsalted butter
  • 300 ml buttermilk


  1. Preheat oven to 180C degrees. Line baking tray with baking paper.
  2. Sift the flours, baking powder, baking soda and salt into a large bowl. Use your fingertips to rub in the butter until mixture resembles course breadcrumbs.
  3. Add the buttermilk and mix with a flat-bladed knife, using a cutting motion until a dough forms.
  4. Turn the dough out onto a floured work surface and knead briefly until smooth. Shape the dough into a ball about 18cm in diameter, and place onto the baking tray. Using a large sharp knift, cut a deep “X”/cross on the surface of the dough. Dust the dough with extra flour.
  5. Bake for 45-50 minutes or until the loaf is golden and sounds hollow when tapped on the base. Transfer to a wire rack to col.


  • You can replace 200g wholemeal flour with plain flour
  • If you don’t have buttermilk, substitute by making your own with 300ml of fresh milk with 1 teaspoon of lemon juice, mix well.


  • Raisin and Rosemary soda bread: Add 255g raisins, 1 tablespoon chopped rosemary and 55g caster sugar after rubbing in butter.
  • Cheddar and Walnut soda bread: Add 90g chopped toasted walnuts and 150g coarsely grated tasty cheddar cheese after rubbing in butter.
