This year I decided to try participating in Foodie Secret Santa giftaway to fellow bloggers. This was a great idea and an event hosted by super talented Claire from Claire K Creations. I have been following her blog for years and always admire her style of writing, her recipes and everything about her, really. It was indeed exciting when I was approached by Claire if I would like to participate in the Secret Santa event. I think it is a brilliant idea to be making something and exchanging our creations among the other food blogosphere enthusiasts during this festive Christmas season.
I was cracking my head what to make for the foodie gift – something that would last the travel journey and would not be affected by the crazy unpredictable Summer heat. It also needed to be something that can be packed easily and compacted into one of those Post Office parcel boxes and will not shatter before it reaches its destination. In the end, the idea of making candied nuts came to me and I thought it was brilliant, and it crossed out all my concerns. Hopefully my fellow foodies friends would find the Cinnamon Candied Almonds and Pecans delicious when it arrive safely in their hands.
- 1 large egg white
- 1/2 cup sugar
- 1/4 cup brown sugar, packed
- 2 teaspoons cinnamon
- 2 cups raw almonds
- 1 cup raw pecans
- Preheat oven to 150 Celcius degrees. Line a baking sheet with parchment paper; set aside.
- In a small bowl, whisk together egg white and 1 tablespoon water until frothy, about 2 minutes; set aside.
- In a medium bowl, combine sugars and cinnamon; set aside.
- In a large bowl, combine almonds, pecans and egg white mixture until well combined. Stir in brown sugar mixture until evenly coated.
- Spread almond mixture onto prepared baking sheet in an even layer. Place into oven and bake for 25-30 minutes, stirring at halftime using a thong.
When the nuts are freshly out from the oven, I let them cooled for about 2 hours in room temperature before packing them into glass jars. These jars are recycled from bottles that I have collected from ready-made sauces bought in the past. I hope my recipients didn’t mind me reusing them. I love using recycled items and my husband sometimes do think I’m a hoarder but I always find a way to reuse stuffs I keep. I really enjoyed the packing process as I adorned each of the jars with little decorative flowers, some ribbons and labelled them with gift tags.
